1/2 pound bacon
2 T butter (or reserve the bacon drippings)
1/4 C flour
1 C water
2 1/2 C milk
2 tsp. chicken bouillon (or 2 cubes)
2 red potatoes, diced into small cubes
3/4 C minced onion
2-3 cloves garlic
1 1/2 C frozen corn
salt and pepper to taste
a few dashes of hot pepper sauce (optional)
Additional crumbled bacon and shredded cheese for garnish

Directions:

Cook bacon until crisp, remove from drippings and crumble.

In the drippings (or in melted butter) add the flour and whisk to make a roux. Add the water slowly, stirring, until there are no lumps.

Add milk and bouillon, while continuing to stir. Bring to a simmer and add potatoes, onion and garlic.

Simmer, but not to a full boil, for 20 minutes, or until potatoes are soft.

Add crumbled bacon, spices and corn and heat through.

Serve with bacon and cheese for garnish.
