1 lb dry beans
1/2 tsp. baking soda
1/2 lb fat salt pork (optional)
1 tsp. mustard
2 tsp. brown sugar
1/2 cup tomato juice (I use ketchup)
2 Tbsp. molasses
2 Tbs.p minced onions

Variations, substitute maple syrup or honey for molasses

Directions:
Wash and sort beans, cover with water and let soak overnight.
Parboil in boiling water with baking soda until skins crack. Put in a bean pit with all seasonings, pork at the bottom.
Cover with boiling water and bake at 300º F for 6 hours.

*add water as needed
