1 1/2 C lukewarm water (divided half/half)
2 1/4 tsp. active dry yeast
1/3 C sugar
3 C flour
1/4 tsp. salt
3 egg yolks plus 1 egg white (reserve the 3 egg whites when separating)
1 1/2 Cwhole milk
8 T. butter, melted and cooled
2 tsp. vegetable oil
2 tsp. vanilla extract

1. Dissolve the yeast in half of the water plus a pinch of the sugar in a medium mixing bowl. let stand 5-10 minutes to allow yeast to foam.

2. Meanwhile, mix the flour and salt together in a large bowl.

3. To the yeast mixture, add the egg yolks, the one egg white, and remaining sugar. Stir to blend.

4. Add the remaining water, milk, melted butter, oil and vanilla to the wet ingredients, and stir until smooth.

5 Add the liquid mixture to the dry ingredients, and mix until smooth.

6. In separate bowl, beat the 3 egg whites until stiff peaks form, then fold gently into the batter.

7. Let the batter stand for 1 hour, stirring every 15 minutes. (or let stand 15 minutes, in a time pinch)

8. Measure about 3/4 cup batter onto a preheated Belgian waffle maker and cook until desired darkness.

Serve with cut fresh fruit and whipped cream.
