1 1/2 c cornmeal
2 1/2 c milk
2 c flour (+ 2 T - maybe only required at Rocky Mountain altitude)
1 T baking powder
1 tsp salt
2/3 c white sugar
2 eggs
1/2 c vegetable oil

Directions:
Directions:
Preheat oven to 400º
In small bowl, combine cornmeal and milk; let stand for 5 minutes.
Grease a 9x13 " baking pan.

In a large bowl whisk together flour, BP, salt, and sugar.
Mix in the cornmeal mixture, eggs and oil until smooth.
Pour batter into prepared pan.

Bake in preheated oven for 30-35 minutes, or until knife inserted into center comes out clean.
