1 1/2 C. firmly packed light brown sugar
2/3 C. vegetable oil
1 egg
1 C. buttermilk (I use powdered)
1 tsp. baking soda
1 tsp. vanilla
1 1/2 C. diced raw rhubarb
1/2 C. chopped pecans

Directions:
Directions:
Combine first three ingredients in bowl. In another bowl combine buttermilk Add the milk mixture to the sugar mixture alternating with 2 1/2 C flour beating after each addition. Fold in diced raw rhubarb and pecans. Turn into 2 greased and floured loaf pans 8 x 4 x 3. Sprinkle with 1/2 C. sugar combined with 1 T. melted butter. Bake at 350º for 1 hour. Cool for 10 min. and turn out of pan onto racks.
