2 sm zucchini
2 sm yellow squash
6 oz pkg sliced mushrooms
2 Tbls butter
1 Tbls Mrs Dash Herb n Garlic

Wash the squashes and trim the ends off (you could peel them but it's better unpeeled) slice them and cut the slices in half. Melt the butter in a frying pan over med heat (to hot and the butter will burn).

Add the squash and mushrooms and stir them to coat it all with butter. Sprinkle with the Mrs Dash and give another quick stir. Cover the pan but leave a 1/2 gap on the side so it doesn't seal, you want to leave a gap for steam to escape.

Cook 2 min and stir, remove the lid and cook another 2 min, stir. Keep stirring every 2 min until they are as done as you like. 4-6 min is long enough for me but I like the squash to be al-dente. If you like your veggies really soft I would plan on 8-12 min.

This is one of Tim's favorite veggie dishes. Sometimes I do it on the grill in a grill pan. You just have to toss the veggies in the butter and seasoning before putting it in the grill pan. The pan should be heated on the grill for a bit before you put anything in it. Oh and spray it with cooking spray to help keep things from sticking.
