Need to ripen green, hard bananas quickly, put them into a paper bag; they will emit ethylene gas that quickens ripening. For overnight results add an apple, which also emits ethylene.
If you are going to bake with bananas, you can place whole unpleeled bananas on a sheet pan and bake at 300 degrees for 1 hr. Cool in the fridge, then peel- they're ready for any banana bread recipe.

Do not store bananas in the same fruit bowl with other fruits as the gas it emits will cause the fruit to spoil faster.
