Old-Fashioned Chocolate Covered Toffee Recipe

Ingredients: 1 cup unsalted butter 1 1/2 cups sugar 3 tbsp. light corn syrup 3 tbsp. water 12 oz. milk chocolate or semi-sweet chocolate, melted 2 cups toasted pecans or almonds, finely chopped

Directions:Line a 12x18-inch jelly roll pan with parchment paper. Place chopped nuts in a shallow bowl; set aside. In a medium saucepan, melt butter. Remove from heat; stir in sugar, corn syrup and water. Return to heat and cook, stirring occasionally, until mixture reaches 300º on the candy thermometer. Pour onto the lined jelly roll pan. While still hot, score the toffee with a knife into 1x1-inch square pieces; let cool. Break toffee apart at score lines and dip each piece into the melted chocolate. With a fork, lift out and let some of the extra chocolate drip off. Then drop each piece onto the bowl of chopped nuts until well-covered. Let dry on a parchment-lined baking sheet. |

Notes: This recipe was a gift to me from my favorite candy store, Old Fashioned Candies. It is owned by three sisters who are passionate about chocolate. I was in charge of making toffee for our OPWE bake sale, and I knew where to head for advice. They were either very kind or just felt sorry for me, since they gave me their recipe, along with a short private lesson on how to make it. These sisters were truly my "sweet angels" that day!
