4 oz. thick cut bacon, cut into 1/4-inch pieces
2 cups onion, diced medium
2 tbsp. flour
4-8 oz. bottles of clam juice
6-6.5 oz. cans minced clams, reserve juice
2 1/2 cups of water
1 1/2 lbs. red potatoes, scrubbed and diced medium
1 bay leaf
1/4 tsp. dried thyme
1 1/2 cups heavy cream
2 tbsp. fresh parsley leaves, minced
salt and pepper to taste

Fry bacon in a Dutch oven over medium-low heat until fat renders and bacon crisps, 5 to 7 minutes. Remove bacon with a slotted spoon to a paper towel-lined plate. Add onion to pan and sauté in bacon fat until softened, about 5 minutes. Add flour, stir until lightly colored, about 1 minute. Gradually whisk in bottled clam juice, reserved clam juice from canned clams and water. Add potatoes, bay leaf and thyme; simmer about 20 minutes until potatoes are tender. Add clams, cream, parsley, reserved bacon, salt and ground black pepper to taste; bring to a simmer. Remove from heat and serve.
