1 head cauliflower
1 cup minced onion
1/2 cup chopped celery
1/3 cup butter
2 cups chicken broth
1 cup of water from cauliflower
2 cups milk
2 Tbsp. flour
1/2 tsp. sea salt
1/4 tsp paprika
grated cheese ( optional )

Directions:
Directions:
1.) Steam 1 head of cauliflower until tender.
2.) Drain but save the liquid to add to the soup.
3.) Blend or chop the cauliflower into small pieces.
4.) Melt the butter in pan. Add the onion and celery and saute until clear on low heat. Do not brown. Add 2 TBSP flour and mix.
5.) Combine all ingredients in a large soup pot. Heat and stir until it boils and is thickened. Reduce heat to simmer.
6.) Garnish with grated cheese before serving.
