2/3 cup butter
1 cup chopped onion
4 cups thinly sliced carrots
1/2 cup rice
6 cups chicken broth
1 tsp. sea salt
2 tsp. curry powder
4 cups milk

Directions:
Directions:
1.) Saute onion in butter in large soup pot
2.) Add carrots, rice, curry and chicken stock.
3.) Heat until boiling. Reduce heat and simmer until the rice and carrots are cooked.
4.) Add salt.
5.) Puree in blender a small portion at a time.
6.) Return soup into pot and add milk.
7.) Heat slowly on med. Do not boil.
8.) Serve

Carrots are high in Vitamin A and curry has anti-inflammatory properties that to relieve pain and fight infection. All in all a great healing soup. This soup also freezes well.
