Ingredients: Sour Beef: 1 large boneless chuck roast, big enough to fill crock pot 1 qt white vinegar (more to taste) 1 cup brown sugar (more to taste) Oil Water 1 box ginger snaps
Potato Dumplings: Water ½ tsp Salt 4-8 potatoes Flour

Directions: |
Directions: 1. Brown all sides of roast in a bit of oil. Put roast in crock pot. Cover in vinegar and water. Cook on high overnight. 2. In the morning, pull roast out of crock pot to cool. In a large bowl, soak ginger snaps in juice from crock pot until they are dissolved. Pour mixture back into the crock pot. 3. Pull apart the roast and return it to the crock pot. Add brown sugar. Stir and add water if the mixture is too thick. 4. Potato Dumplings: Put water on to boil. Add salt to the water. Peel and then grate potatoes. Mix grated potatoes with flour and some salt in a bowl until the mixture is mostly dry. Form the mixture into balls and drop into the boiling water. When dumplings are white, pull them out, drain them, and add them to the crock pot. 5. Continuously taste gravy and add more vinegar and/or brown sugar as needed.

Notes: This is a recipe that is equally loved and hated by various family members. Doris made it from memory and the recipe was never written down until Jodi, Kennys wife, made it with her and took notes the whole way. It may not look appealing, but the unique taste can really hit the spot.
