5 lbs apples (peeled, cored, diced)
1 3/4 c. apple cider
1 1/4 c. sugar (+/-, depending on apples)
2 Tbsp. lemon juice
pinch of salt
1/4 tsp. ground mace
1/4 tsp. nutmeg

Directions:
In a large pot, bring apples and cider to a boil over medium heat, stirring constantly to prevent sticking/burning. Reduce heat to low and simmer until safe, 30 -35 minutes. Use a fork, potato masher or immersion blender to mash mixture. Return to heat and add remaining ingredients. Simmer until thick, about 1 1/2 hours. Mixture will have an uneven texture; puree for a smooth butter.

If refrigerated, will keep for one week; if canned/processed 6 months.

The most time consuming part of this is peeling, coring and dicing the apples. As a general rule, I use a variety of apples in all of my baking/cooking, because I like the different flavors.
