1 1/2 lb ground beef
4 ciabatta rolls
6 ounces Fontina cheese, sliced
1/3 cup mayonnaise
2 cloves garlic zest
1 lemon, juiced
1/2 bunch Lacinto kale
Olive oil
Salt and pepper

Directions:
Directions:
1. Remove and discard kale stems. Thinly slice the leaves. Place in a bowl with the juice of 1/2 lemon. Drizzle with olive oil, add salt and pepper to taste. Toss to coat. Set aside, stirring occasionally.
2. Place ground beef in a bowl and season with salt and pepper. Gently mix to incorporate. Form four 1/2-inch-thick patties. Heat 2 tablespoons olive oil in a pan on medium-high until hot. Add the patties and cook 2 to 4 minutes on the first side, or until browned. Flip and top with the cheese. Cook another 2 to 4 minutes or until the cheese is slightly melted.
3. While the patties cook, combine mayonnaise, garlic paste and the juice of 1/2 lemon in a small bowl. Salt and pepper to taste.
4. Place the ciabatta rolls on a sheet pan, cut sides up. Toast in the oven at 475ºF for 4 to 6 minutes, or until the edges are lightly browned.
5. Spread aoli on bottom of roll, top with patty, kale and roll top.
