4 medium Granny Smith apples, cubed with peel on
1 cup salted peanuts
20 oz. can crushed pineapple, save juice
2 cups miniature marshmallows
8 oz. Cool Whip
1/2 cup sugar
1 tbsp. flour
1 egg, beaten
1 tbsp. lemon juice
2 tbsp. apple cider vinegar

Drain pineapple and save juice. Mix pineapple and marshmallows; put in an airtight container and refrigerate overnight. In a saucepan, heat pineapple juice, sugar, flour, beaten egg, lemon juice and vinegar; stirring constantly. Bring to a slow boil. Cool completely; put in a separate container and refrigerate overnight. On the next day, core and dice apples. Mix apples, peanuts, marshmallows, pineapple and taffy mixture; blend well. Fold in Cool Whip and refrigerate.

This is a great salad for a summer party. Wow! It really does taste like a taffy apple.
