1 1/4 cup flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter
1 cup peanut butter
1/2 cup packed light brown sugar
3/4 cup plus 1 Tbsp sugar, divided
1 egg (room temperature)
1 Tbsp whole milk
1 tsp vanilla
1 cup peanut butter chips

Directions:
Directions:
Preheat oven to 350º. In large bowl, combine flour, baking soda, baking powder and salt. Set aside. In large bowl, beat butter and peanut butter until fluffy. Add brown sugar and 3/4 cup sugar and beat until smooth. Add egg and mix well, then add milk and vanilla. Add flour mixture, then stir in peanut butter chips. Use medium ice cream scoop to drop onto ungreased cookie sheet. Using fork, lightly indent with criss-cross pattern, but do not overly flatten the cookies. You want them to be fairly thick. Lightly sprinkle cookies with remaining 1 Tbsp sugar (use more if needed). Bake for 10-12 minutes, but be very careful not to overbake. They may look underdone, but they are not. Cool the cookies on the sheet for 1 minute, then remove to rack to cool completely. They will be fragile until they are entirely cooled.
