Ingredients:	Ingredients: 1 cup butter plus 2 tbsp., softened 8 tbsp. powdered sugar 2 egg yolks 3 cups flour 1 tbsp. rum extract 1 1/2 bags caramels, unwrapped 3/4 cup milk 12 oz. chopped peanuts

Directions:	Directions: Mix first five ingredients together. Using the small end of a melon baller, form dough into small balls. Place on parchment-lined cookie sheets and bake in a preheated 375º oven for 12 to 15 minutes. Do not brown. Place a toothpick in the center of each cookie upon removal from oven. In a microwavable bowl, microwave caramels with milk, stirring frequently until melted and smooth. Dip cookie into caramel mixture and roll in peanuts. Put into petit four paper baking cups and cool.

Personal Notes:	Personal Notes: A co-worker made these cute cookies for a Halloween party and people went crazy for them. Not only were they clever, but they tasted just like a Taffy Apple.
