1 cup butter plus 2 tbsp., softened
8 tbsp. powdered sugar
2 egg yolks
3 cups flour
1 tbsp. rum extract
1 1/2 bags caramels, unwrapped
3/4 cup milk
12 oz. chopped peanuts

Directions:
Directions:
Mix first five ingredients together. Using the small end of a melon baller, form dough into small balls. Place on parchment-lined cookie sheets and bake in a preheated 375º oven for 12 to 15 minutes. Do not brown. Place a toothpick in the center of each cookie upon removal from oven. In a microwavable bowl, microwave caramels with milk, stirring frequently until melted and smooth. Dip cookie into caramel mixture and roll in peanuts. Put into petit four paper baking cups and cool.

A co-worker made these cute cookies for a Halloween party and people went crazy for them. Not only were they clever, but they tasted just like a Taffy Apple.
