2 lbs sausage meat
1 onion chopped
1 large carrot shredded
2 sticks celery chopped (optional)
¾ loaf of bread toasted
2 eggs
Chicken broth as needed (substitute can be water that giblets have been boiled in)
½ teaspoon Poultry seasoning

Directions:
Directions:
Sauté the sausage meat until browned, remove from pan keeping the grease in the pan. Add onions, carrots, and celery to the pan and sauté.

Toast the bread, let cool and rip into small pieces. Place in a large bowl or pot. Beat eggs and add to bread. Add sausage, onion, celery, and carrots. Add approximately 1 teaspoon of poultry seasoning. Mix and add chicken broth (water) as needed, but be careful not to let it get too soupy.

Bake covered for approximately 45 minutes at 350.
