1 small/medium onion chopped finely
2 cloves garlic chopped finely
Olive oil
2 cans Pastene ‘Kitchen Ready’ crushed tomatoes (14.5 oz)—can use other brands
2 cans tomato paste (6 oz)
2 6 oz cans of water
Around 1 tablespoon (guess) Italian seasoning
Around 1 tablespoon (another guess) dried basil (or fresh finely chopped)
A pinch of garden mint

Directions:

Put a small amount (~1-2 tablespoons) olive oil in a heavy pot and sauté onions and garlic until cooked, not browned. Add the remaining ingredients in the order given (fill the tomato paste cans with water to get correct measurement of water). Stir all and simmer on low for one hour or longer stirring occasionally. This can also be made in a crock pot—the onions and garlic will take longer to cook and the sauce can be cooked on low for up to 3-4 hours.
