1/3 cup Shortening
1/2 cup Sugar
2 Eggs
1 3/4 Cup Flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 Cup mashed Bananas
Optional: 1/2 cup chopped walnuts -or- 1/2 cup miniature chocolate chips

Directions:
Directions:
Preheat oven to 350

Grease pans.

Mix all ingredients except the optional items with mixer.
Stir in optional item.
Pour into pans.

Makes: 1 large loaf (bread pan) bake for 45 minutes
-or- 3 small loaves-- bake for 35 minutes
-or- 8 mini loaves (personal sized) bake for 25 minutes

Louise Griffiths, of course, is my wonderful mother. We make banana bread every year as gifts at Christmas. Great when you have very ripe bananas. Freezes well.
