6 XL Eggs
1/4 C Mayonnaise
1 tsp finely chopped shallot
1 T Dijon Mustard
1/2 tsp White pepper
1 T Hungarian Paprika
Pizzazz (OPTIONAL) 1.5 T diced jalapenos, capers, sun dried tomatoes, pimento, whatever!

Peel 6 (cold) hard- boiled eggs and cut laterally into halves Remove yolks to bowl. To yolks add all ingredients but paprika. Mix, fill each egg half with mixture. Refrigerate for 1 hour. Set onto service plate & garnish with paprika. Deviled eggs are fun because hardly anyone makes them anymore so they're a real treat.
