2.5 lbs. Beef (Chuck Roast, London Broil, etc.)
2 T Crushed Blk. Peppercorns (use coffee grinder or meat mallet)
1 T Kosher Salt
2 Garlic cloves, smashed (or 3!)
2 tsp Cayenne powder
2 T Dijon Mustard
1 T Worcestershire
1/2 tsp Soy sauce
3 (32oz) boxes beef stock
Olive oil
1 Pat of butter
1/2 C finely diced onion (yellow)
1/2 Bottle BBQ Sauce (Stubb's Extra Spicy)
1/4 C Cognac (or similar)
1/2 Carrot, whole
1/2 Celery Stalk, whole

Rub salt and pepper on both sides of beef. Rub 1 T Dijon onto meat. Heat grill to 400F, and spray with cooking spray. Sear meat on grill, until grill marks appear, on all sides. Let meat rest. In large pot, heat olive oil and butter on medium.
Add onions & garlic. When onions are glossy, add cognac and soy - reduce.
Add stock, carrot, celery, remaining seasonings, & meat. Set pot, or crockpot, to medium for 30 min, then to low. Cook 6-8 hours until the meat easily falls apart. You can thicken your sauce by removing some into a cup and whisking in Argo then pouring back into pot if needed. Remove and discard celery and carrot. Add BBQ sauce after liquid has reduced (1/3 - 1/2 bottle to taste). Fork the meat into "pulled" texture, mix and serve on butter toasted buns (regular or King's Hawaiian for sliders) Dill pickles are mandatory accompaniment.
