1 lb. Filet Mignon, ground (med)
2 tbsp Dijon Mustard
1 egg yolk
2 tbsp Worcestershire sauce
1/4 cup finely chopped onion
3-4 tbsp capers
5 dashes hot sauce
1-1.5 Tbsp Cognac
1/2 tsp kosher salt
1 tsp black peppercorns, fresh-ground
1 tsp minced garlic (sauteed with butter and allowed to cool)
Optional - small olive oil drissle

Directions:

Mix together by hand, shape into a loaf. Refrigerate 1 or more hrs for flavors to marry
Serve with: Nice Bread (fresh, toast points, etc. pumpernickel is great...), crackers, shaved egg whites / yolks, chopped onions, capers, Dijon Mustard, horseradish, fresh raw vegetables, sliced cheeses
