2 lbs Potatoes (about 6 medium)
3 tbsp butter
3 tbsp flour
Salt and pepper to taste
2 ½ cups milk
¼ cup finely chopped onion (or more)
1 tbsp butter (for top)
Ham - (Farmland boneless)

Directions:
Directions:
Heat oven to 350 degrees.
Wash potatoes pare thinly and remove eyes.
Cut potatoes into thin slices to measure about 4 cups.
Melt 3 tbsps butter in saucepan over low heat.
Blend flour and seasonings.
Cook over low heat, stirring until mixture is smooth and bubbly.
Remove from heat. Stir in milk.
Heat to boiling, stirring constantly.
Boil and stir 1 minute.

In greased 2-quart casserole, arrange potatoes in 2 layers, topping each layer with half the onion mixture and ham.
Cover with 1/3 the white sauce.
Top with the remaining potatoes, onions and ham.
Cover with the white sauce and dot with 1 tbsp butter.
Cover: bake 30 minutes.
Uncover: bake 60-70 minutes longer or until tender.
Let stand 5 to 10 minutes before serving
