2 chicken breasts
2-3 Tbsp. goat cheese
4-5 basil leaves
½ cup bread crumbs or panko
1 egg
½ cup milk
¾ cup tomato sauce or marinara

Directions:
Directions:
1. Preheat oven to 375ºF.
2. Pour bread crumbs onto a plate.
3. Put egg into a bowl and mix with milk. Whip together.
4. Slice chicken breast to create a pocket.
5. Place some of the goat cheese and tear up some basil leaves to put into the chicken pocket.
6. Dip in egg and milk mixture. Dip in bread crumbs. Place in pan that you sprayed with non-stick spray.
7. Top chicken breasts with marinara or tomato sauce and place in oven.
8. Bake for 25-30 minutes.
9. Put basil leaf and a little more goat cheese on top of chicken.
10. Bake for about 5 more minutes.
11. Serve with vegetable or pasta of your choice.
