1 15 oz. can black beans, drained and rinsed
1 c. whole kernel (shoepeg?) sweet corn, drained
1 c. diced red bell pepper
1/4 c. chopped fresh parsley
1/4 c. red wine vinegar
1 garlic clove, minced
2 Tbsp. sugar
2 tsp. lemon juice

Directions:
In bowl, combine all vegetables. Combine all remaining ingredients, stirring until sugar is dissolved. Pour over vegetables; chill.

This recipe came from the Simply Divine cookbook prepared for the Episcopal General Convention in Minneapolis in 2003. I purchased it from a very sweet client of mine, Bob Melin of Stillwater. First time I had a similar salad it was brought to a potluck by a very chic wife of a deceased cousin of Grandpa Jim's, Katherine Salverda. She's also an artist.
