6 oz. can tuna, drained, packing oil or water reserved
1 can cream of celery soup, undiluted, divided
1 cup finely crushed saltine cracker crumbs
2 tsp. lemon juice
1/4 cup chopped parsley
2 eggs, beaten
1/4 cup chili sauce or ketchup
1 tbsp. sour cream
oil for frying

In a large bowl, combine tuna, 1/2 cup of the celery soup, about 1/4 cup of the cracker crumbs, lemon juice and parsley; mix well. Add additional cracker crumbs, if necessary until the mixture is barely firm. Chill and shape into patties or any croquette shape. Combine eggs and chili sauce or ketchup. Dip croquettes in egg mixture, then roll in additional cracker crumbs. Fry in small amount of oil over low heat until nicely browned on both sides and hot in the center. Finish in a moderate oven, if desired. Make a sauce by combining the remaining soup with some of the reserved tuna water. Add 1/4 cup chili sauce or ketchup. Cook over low heat until hot.

We found this recipe for mom when she was limited to softer food choices. But after making them, we were amazed at how good they were. Mom seemed to always enjoy eating together when we were all eating the same food. It just made her feel like she was "one of the gang!"
