5 medium summer squash – zucchini or yellow, cut into ¼ inch slices
½ medium onion, chopped
3 slices bacon, cut into 1 inch pieces
1 c. no fat shredded cheddar cheese
Salt and pepper to taste

Directions:
Cook bacon until it starting to brown. Add onion and cook until onion is soft and bacon is brown. Pour off most of the bacon fat. Add squash, salt and pepper, and sauté, stirring often, until the squash is soft. (You may have to turn the heat down to low and cover the pan to cook the squash without burning.)

Spray the inside of a small casserole dish with cooking spray. Put in half the squash and cover with half the cheese. Put in the other half of the squash and cover with remaining cheese. Cover the casserole and bake at 350 ͦ for 25 minutes. Uncover the casserole and bake for an additional 20 minutes.

I still like the food at Luby's, They used to have this casserole sometimes, I think to use up leftover squash. I always liked it a lot. I have tried duplicating the recipe many times and this is the latest one. I've changed the cheese from American to low fat cheddar.
