French Canadian Meat Pie (Tortiere) Recipe

2 lbs ground pork
1 lb ground chuck
2 large onions, finely chopped
2 cloves garlic finely chopped
2-1/2 tsp poultry seasoning
1 tsp salt
1 tsp celery salt
1-2 tsps. Pepper
1/2 tsp sage
1 cup water
3 medium potatoes cooked and mashed

Combine pork, shuck, onion and garlic in large heated skillet. Cook stirring often until meat losses its pink color..


Stir in poultry seasoning; salt, celery salt, pepper, sage and water. Cover and simmer 20 minutes. Uncover and simmer 10 minutes longer

Remove from heat, stir in mashed potatoes and cool slightly.

Divide into 2 9” pie shells. Add top crust. Do an egg wash on crust.
Bake at 425 for 15 minutes then 350 for 25 minutes or until pastry is golden brown.

Jennie Thompson was my dear Scottish lady from Cornwall, Ontario. She and I traveled together to England and became best friend. She is the lady that taught me to hand quilt and helped me quilt Brittney Kaulback’s baby quilt. RIP Baby Jane and listen to the bag pipes play.
Her meat pies were awesome. I have since adapted the recipe to use instant potatoes flakes. I stir in a little at a time until the juice of the meat mixture is absorbed. Really not a lot of difference if a good brand of potato flakes is used
