1 1/2 cups Flour
1 tea Baking Soda
1 tea Baking Powder
1-2 tea Cinnamon (depending on taste)
1/2 tea Salt
3/4 cup Brown Sugar
1/2 cup Raisins
1/2 cup Chopped Nuts
2/3 cup Vegetable Oil
2 Eggs
1 cup Shredded Carrots
1 tea Vanilla

Directions:
Directions:
Sift together flour, baking soda & powder, cinnamon and salt. Stir in sugar, raisins and nuts. Make a "well" in dry mix and add oil, eggs, carrots and vanilla. Combine until blended. Pour batter into a greased and floured 8" pan. Bake in a oven preheated to 350 degrees F. for 40-45 mins.
