1 1/2 lbs. pork tenderloins (1" thick)
3 tbsp. butter
3 shallots, minced
1/2 cup dry vermouth
1 1/2 cup low sodium chicken broth
1 tbsp. green peppercorns in brine, drained
1 1/2 tsp. fresh thyme
2 tsp. Dijon mustard
1/3 cup whipping cream

Directions:
Directions:
Flatten pork, salt and pepper.
Melt 2 tbsp. butter in heavy skillet over medium-high heat.
Add pork and cook until browned (approximately 3 minutes on each side).
Transfer to a warming plate.
Melt remaining butter, add shallots and saute 2 minutes.
Add vermouth and boil to reduce, about 5 minutes.
Add chicken stock, peppercorns, thyme and reduce to 3/4 cups, about 10 minutes.
Whisk in mustard and cream.
Salt, pepper and add pork to heat 3 minutes.
