6 to 9 fresh trout, filleted
1/2 tsp. salt
1/4 tsp. white pepper
2 eggs, well blended
1/4 cup milk
1 1/2 cups toasted bread crumbs, finely chopped
2 tbsps. corn or peanut oil
1 stick butter, softened
2 hard-boiled eggs, finely chopped
1/3 cup fresh parsley, finely chopped
2 tbsps. pimento, finely chopped
2 lemons, thinly sliced

Season trout with salt and pepper. In a medium bowl, mix beaten eggs and milk; dip trout fillets in mixture, then roll gently in bread crumbs.
Heat oil to medium, adding oil if necessary to keep fish from sticking.
Make a paste by combining butter, hard boiled eggs, parsley and pimento.
Fry trout until golden, 5-6 minutes per side.
Remove to heated platter. Spread butter paste over each fillet and top with 2-3 slices of lemon.
