3 - 5 lbs. flan steak
1 cup chile paste, pasilla or Santa Cruz
2 - 4 tsp. cayenne pepper (optional)

1/4 cup olive oil
1 medium onion, chopped
2 cloves garlic
1 lb carne de raja, shredded (recipe above)
2-3 large tomatoes
1 cup green chilies, peeled, seeded, & stemmed

Preparation of steak:
Cut partially frozen flank steak into thin strips. Soak completely in chile paste for 20 - 30 minutes. Remove and place on cookie sheet and bake at 200 degrees for 4 hours or until meat is dry. Turn occasionally until meat is dry.
Remove, cool, and store in an airtight container.

Carne De Raja:
In sauce pan heat oil on medium heat. Sauté onion and garlic until soft. Add remaining ingredients and fry until fry until the flavors are blended, and vegetables are still crisp and bright.

Preparation Time: 4.5 hours for steak. 25 minutes for Carne De Raja

Tip: To shred meat, cut into inch pieces and put in blender. Switch on and off until meat is chopped. Meat should be chunky, don't puree.
