Chicken Pot Pie Recipe

4 c chicken, cooked and deboned
1 onion, chopped
3 carrots, chopped
3 cloves of garlic, chopped
4 T margarine
1 can cream of mushroom soup
1/2 c milk
2 c peas
1 T dried thyme
1 tsp poultry seasoning
1 box cornbread mix
salt and pepper to taste

Preheat oven to 425 degrees F Greased a 9x13x2 inch baking dish

Saute onion and carrots in margarine until soft. Add garlic and saute until soft. Mix in chicken, soup, seasonings and milk and heat through. Mix cornbread mix according to the package directions. Spread cornbread over the chicken mixture. Pour chicken mixture into the baking dish.

Bake uncovered for 20-25 minutes or until golden brown. Remove and let stand for 5 minutes before serving.
