4 cups chopped fresh tomatoes or 1 large tin canned tomatoes
1 onion, chopped
1 clove of garlic, minced
1 stalk celery. chopped
3 cups of chicken broth
1 Bay leaf
2 TBSP olive oil
1 TBSP butter
2 TBSP flour
1 tsp. sugar
1/4 tsp. thyme
sea salt and freshly ground pepper

1. Heat oil & butter in large pot.
2. Add the onion & garlic and saute for about 8 min. until soft but not browned.
3. Stir in the flour.
4. Puree the canned tomatoes with a blender.
5, Add all the ingredients.
6. Cook over med. heat. Once boiling, reduce the heat. Simmer until you have a thick sauce, stirring often.
7. Add 1/4 tsp. baking soda and an equal amount of milk.

If you have an abundance of tomatoes you can make a large batch of the sauce and can it or cool the sauce and put into containers to freeze for later. Then just heat the sauce and add the Baking soda and milk.
