1 (12 or 16 inch) flour tortilla
1 cup olive oil
1 cup Munster or Monterrey jack cheese, grated
1/4 - 1/2 cup green chilies, diced

Heat oil on medium high in frying pan big enough to fit the tortilla. Fry the tortilla until golden brown on both sides. Remove and drain on a paper towel. Cover tortilla with cheese and chilies. Broil 3 - 4 minutes until cheese is melted and golden.

Garnish with: Salsa, guacamole, fried chorizo, and sour cream if desired.

Variation: coat one side of tortilla and put in hot frying pan. Sprinkle cheese and chile on the top of the tortilla and cook until cheese has melted and bottom of tortilla is golden brown.

The most popular of all Mexican appetizers. Serve before a meal. You cut it into wedges like a pizza or you can break off a piece for each guest. My favorite way to serve this cheese crisp is to put it in the middle of the table and let my guests take what they want.
