3 larges eggs beat well
1 1/4 c oil
1t. vanilla
2 c. sugar
1 t soda
1 t cinnamon
grated rind of 1 lemon or orange
1c coconut
1 c crushed pineapple w/ juice
3 c grated carrot
1/2 c walnuts (crushed) other nuts can be used

FROSTING
8oz cream cheese (softened)
1/4 c butter (softened)
1 t. vanilla
beat together and spread on cooled cake

Directions:

Beat the eggs well, add oil, vanilla, sugar stir together. Sift in flour salt soda cinnamon.
add rind, coconut pineapple carrot.

This cake can be baked in layers or in a 9x13 pan.

Bake 350º 1 hour until toothpick inserted comes out clean
