Ingredients: 4 eggs 1 c half & half 1/2 c Hellman's real mayonnaise 2 Tbsp flour 1/3 c onions ( minced) salt & pepper to taste (garlic powder optional) 8 oz shredded swiss or sharp cheddar cheese 1 pkg frozen chopped spinach, thawed, squeeze dry 1 - 9" unbaked deep pie shell (I buy frozen...Marie Callender's or Oronoque Orchards) 2 links of sausage (1/3 lb.) OR 3 slices of bacon (optional)

Directions:** I make this the night before and store in the refrigerator on a cookie sheet
Preheat oven 350º
If you want to have sausage or bacon, cook and set aside. Using a whisk or fork, hand whip eggs. Add half & half, mayo, and flour in a medium mixing bowl and hand whip. Add remaining ingredients. **If you add meat, there will be excess batter so you can use less cheese than stated.
Pour into unbaked, deep pie crust. Bake on a cookie sheet to avoid mess. Bake 45 min - 1 hour (inside should be firm, but not dry) Let set for a few minutes before you cut into quiche. |

Notes: This dish is another Christmas morning tradition that I cherish. When you make this, reflect on some of our morning traditions....not being able to come downstairs to see what Santa brought until a certain time, how we couldn't open gifts until all five of you were awake (physically), and how we worked up an appetite and were able to eat the pumpkin bread and quiche which was easy for me because I could make it the day before and not miss a single gift being unwrapped!
