1 c green bell pepper, chopped
1 c onion, chopped
1 T margarine
1 can cream of mushroom soup, condensed
1 can cream of chicken soup, condensed
1 can Rotel tomatoes
1 whole chicken,2 1/2 -3 lb
12 soft corn tortilla, cut into bite size pieces
1 1/2 c cheddar cheese, shredded

Directions:
Preheat oven to 325 degrees F. Grease 9x13x2 inch baking dish.

Stew chicken in water with salt, pepper and a bay leaf. Debone chicken and cut into bite size pieces. Saute green pepper and onion in margarine until tender. Stir in soups and Rotel tomatoes. In baking dish arrange alternate layers of tortillas, chicken mixture and cheese into 3 layers.

Bake 40 minutes or until hot and bubbly or until cheese is brown.
