1 lb ground beef
1 T chili powder
1 clove garlic, minced
1/2 tsp salt
1/2 c chopped onion
3 c prepared white sauce (see below)
1/2 tsp ground sage
1/2 tsp oregano
1/2 tsp ground cumin
2 T chopped, mild green chiles
2 c grated cheddar cheese (8 oz)
2 tomatoes, chopped
12 white flour tortillas
1/2 head iceberg lettuce, shredded

Basic medium white sauce, to make one cup
2 T butter
2 T flour
1/4 tsp salt
1 c milk

Directions:
Directions:
Brown ground beef and drain. Add chili powder, garlic, salt and onion. (I usually saute onion towards the end of browning meat).
Combine white sauce, sage, oregano, cumin and chiles. Simmer over
very low heat til warm.
Reserve 1 cup sauce and 1 cup grated cheese.
Mix remaining sauce and cheese with meat, lettuce and tomatoes.
Place this mixture in tortillas, roll, and place seam side down in a flat
baking dish (7x11) sprayed lightly with Pam
Top with reserved sauce and cheese.
Cover with foil, using toothpicks to keep foil off of cheese if necessary.
Bake at preheated 350º for 15-20 minutes.
