3/4 cup butter, softened
1 1/2 cups brown sugar, firmly packed
2 tbsp. water
2 cups semi-sweet chocolate chips
2 1/2 cups flour
1 1/4 tsp. baking soda
1/2 tsp. salt
2 eggs
48 Creme de Menthe Andes Mints, foil wrappers removed

Directions:
Directions:
In a microwavable bowl, add the butter, sugar and water; microwave until butter is melted. Add the chocolate chips and stir until melted. Let cool for 10 minutes. In another bowl, combine flour, baking soda and salt; set aside. In a large mixing bowl, beat the eggs, adding in the chocolate mixture; beat well. Slowly add flour mixture until well-incorporated. Refrigerate dough at least one hour. Roll a heaping tablespoon of dough into a ball and place on parchment-lined cookie sheets about 2 inches apart. Bake in a preheated 350º oven for 7 to 10 minutes. Remove cookies from oven and immediately place one mint in the center of each cookie. Wait 5 minutes until it has melted and spread the chocolate over the tops of the cookies.

These cookies always reminded us of Girl Scout Thin Mint cookies. They are a bit of work, but worth it. Be sure to buy extra mints, because they seem to disappear one by one while unwrapping them!
