butter or margarine
canola oil
salt
pepper
aluminum foil
herbs, optional
carrots, optional
onion, optional
celery, optoinal

Directions:
Directions:
Preheat oven to 500 degrees F.

Pat dry turkey and loosen skin over the breast careful not to tear skin. Rub butter or margarine and herbs under skin. Rub oil over outside of turkey and salt and pepper. Onion, carrot and celery can be stuffed in cavity.

Place turkey in oven and cook for 30 minutes. Remove turkey from oven and place aluminum foil over the breast area. Lower the oven to 350 degrees F. Cook until breast meat reaches 160-165 degrees F and the dark meat reaches 180-185 degrees F. Remove turkey from oven and let rest for at least 15 minutes before carving.
