**Again, I make large quantities and never pay attention to how much of each, so I'll try to guess and tone it down!

6-8 lbs sausage (I use Price Chopper brand and do most hot with a little sweet
mixed in. Use what you like)
**I cut each link into three pieces
3-4 peppers (green, red, or yellow) - cut medium size slices
4 medium onions - cut medium size slices
2-3 cloves of garlic minced
1 -2 large containers of Perreca's sauce
3/4 c - 1 c parmesan cheese
Fresh parsley and basil (if available) chopped

Heat olive oil in a large electric fry pan. Cook sausage pieces through on med/low heat. Check middle of a bigger piece to make sure it's done. Take pieces out as done with slotted spoon and place in a large bowl. Using the grease already in pan, add sliced peppers and onions. (If there's too much grease, pour out excess before frying veggies). Cook on med/low heat.

Once it gets going, add garlic and stir. When veggies are cooked to your liking (not too soft, not too hard), pour sausage pieces back into fry pan. Pour sauce to taste. Sprinkle with parm cheese. Let simmer for approximately 20 min.

Grandma made hers without sauce or cheese. She sometimes added potatoes cut in small pieces.

Pete and Hann, you can make this without onions. I've never made this without Perreca's sauce. I'm sure the change in sauces will make each batch taste differently.
