**You can make less depending on the size of YOUR turkey!
4 tubes of Jones sausage
1 medium onion, chopped small
4 celery stalks - middle ones if possible (slice down the middle in 1/3's then chop
thin)
1 box Bells Seasoning - 1-2 Tbsp
Black pepper to taste
1- 32 oz box of Turkey Stock (No MSG) (may need more than one box unless you stuff your tourkey)
1 bag of herb cubed stuffing (I typically use Pepperidge Fam)
1 bag of herb seasoned stuffing mix (crushed cubes)

**Make the night before, refrigerate and stuff turkey with cold stuffing. Allow extra time to cook for a turkey that's stuffed.
**I use a large electric fry pan

Squeeze sausage into large electric fry pan. Chop sausage into small pieces using a wooden spoon as it cooks on med/low. When sausage is almost done, add onion and celery and stir. Cook until veggies are soft and sausage is cooked through. Sprinkle with Bell's seasoning across the top of the stuffing (approx. 1 tbsp). Sprinkle pepper to taste. I don't use salt because the sausage is salty.

Add one bag of cubed herb seasoned stuffing and 1 bag of stuffing mix. Pour 32 oz turkey stock over stuffing. Stir. Add more stock if needed, however, cooking stuffing inside turkey will moisten stuffing. Simmer approx. 20 min.+


**When the turkey comes out, warm up the stuffing that didn't make it inside the turkey. when you take stuffing out of the bird, add to the extra in bowl. Pour a generous amount of the juice from the pan on the stuffing...amazing flavor!

Grandma used water instead of turkey stock and only cubed stuffing. I tweeked a bit.

Thanksgiving has always been our largest family gathering, for a holiday that is. This recipe is a fan favorite! So someone please keep up this stuffing tradition :)
