Take 1-1/2 to 2 pounds of tenderized round steak and cut into serving pieces. Work a lot of flour into the pieces of meat, adding some pepper. Over medium heat, melt the Crisco in the pressure cooker, add the meat, and brown on both sides. After you turn the meat over, sprinkle it with salt. Place the browned pieces of steak on a plate. Add 2 cups of water to the pressure cooker. Heat the cooker over medium heat. Add layers of browned meat and chopped onion. Put lid on pressure cooker and set the pressure gauge to 10 pounds. Keep stove heat on medium until the gauge begins to jiggle. It should jiggle a bit, then pause a few seconds before starting again. If it jiggles constantly, turn the heat down to low. I have to go between medium and low on my electric stove. Cook like this for 30 minutes, then quick cool under cold running water in sink. Pressure will have gone down when you push on the gauge and it doesn't make any noise. Wrap pieces of steak in foil and keep warm. Meanwhile, add some flour to the liquid left in the cooker. Stir well and add a small can of sliced mushrooms. Add water as needed and salt and pepper to taste. Add some Kitchen Bouquet for added flavor. Pour gravy into a bowl and serve with mashed potatoes.

The introduction of pressure cookers into household kitchens must have been a big deal! It meant radically shortened cooking times for busy families. However, this recipe still looks like it took a lot of time. I still remember the sound of the pressure gauge on the cooker and the sight of my mother's hands covered in flour as she dredged the steaks before placing them in the cooker.
