1 1/2 lb eggplant, peeled and cubed
1 pkg herb stuffing mix
3/4 c milk
1/4 c butter, melted
1/4 c onion chopped
1/4 c bell pepper, chopped
1/4 c celery, chopped
1 tsp salt
1/4 tsp sage
1 1/2 c cheddar cheese, grated
2 eggs
1/2 c evaporated milk

Directions:
Directions:
Preheat oven to 350 degrees F. Grease a 2 quart baking dish.

Place eggplant into a pot with salt and cover with water. Simmer until tender about 5 minutes. Combine stuffing mix and milk and let soak. Saute onion, pepper and celery in butter until tender. Add drained eggplant and stuffing. Remove from heat. Add eggs and cheese and mix. Place in greased pan and bake for 45 minutes or until brown.
