1 1/2 c sugar
1/3 c water
1 1/4 c heavy cream
1/2 tsp vanilla

Directions:
Directions:
Mix sugar and water in a medium heavy saucepan. Cook over low heat for 5 to 10 minutes, until sugar dissolves. Do not stir. Increase the heat to medium and boil uncovered until sugar turns a chestnut brown, about 350 degrees on a candy thermometer; gently swirling the pan to stir the mixture for about 5 to 7 minutes. Mixture is extremely Hot. Watch the mixture carefully it will burn quickly. Turn off the heat. Add cream and vanilla slowly, mixture will splatter. Cream will bubble violently and solidify mixture. Simmer over low heat, stirring constantly until caramel dissolves and sauce is smooth, about 2 minutes. Allow to cool to room temperature. Will thicken as it cools.
