5 lbs. chicken thighs
1 cup soy sauce
1 cup water
1/4 tsp. powdered ginger or 1" fresh grated ginger
2+ large cloves fresh grated garlic
2/3 cup white sugar
a little water and a couple Tb cornstarch

Directions:
Directions:
Night Before: Remove chicken skin and extra fat from thighs. Soak chicken in all the ingredients except water and cornstarch. Next Day: Place in large pot with cover. Bring to boil and then simmer slowly until done­­ about 1 1/2 hours. Remove chicken with slotted spoon. Add cornstarch mixed with water and stir in to thicken gravy. Boil a few minutes, stirring constantly until the gravy thickens. Enjoy with rice!
