1 T vegetable oil
1# round steak cut into cubes
1 T butter
3 yellow onions, sliced into rings
6 cups beef stock
1 T Dijon mustard
1/4 cup dry red wine
1 tsp salt
1 tsp pepper
6 oz mushrooms sliced
1/4 cup chopped fresh parsley
1 cup grated Swiss cheese for topping

Directions:
Directions:
warm oil in dutch oven over medium heat, add beef and brown about 5 minutes, remove to a plate

reduce heat add butter and onions and toss until onions are slightly limp 6-7 minutes

add stock, Dijon mustard, wine, salt and pepper, return beef and bring to a boil

reduce heat to med. low and simmer, covered about 1 hour

add mushrooms and simmer 30 more minutes. add parsley

ladle into bowls, sprinkle with cheese
