Microwave Carmel Puff Popcorn Recipe

Ingredients: ½ cup butter (1 stick) 1 cup light brown sugar ¼ cup white Karo syrup ½ tsp salt ½ tsp baking soda 8-oz bag of plain or butter-flavored puff popcorn with no hulls. (Note: Kwik Trip has bags 2/$3.00)

Directions: Melt the butter in a 2-quart or larger glass bowl in microwave. Stir in the brown sugar, syrup and salt until mixed. Return to microwave and bring to boil, then cook on high for another 2 minutes (approximately 3 minutes total depending on your microwave). Meanwhile, dump approximately 2/3 of puff popcorn into a clean brown paper grocery bag. Take cooked syrup out of microwave and stir in the baking soda. Mixture will begin to foam up (reason you need a bigger bowl to allow room to expand). Pour foaming syrup over the popcorn in the bag. Caution: syrup is extremely hot and sticky! Roll the top of the paper bag down and stuff entire bag into the microwave. Cook on high for 1 minute. Take out and with top still rolled, shake bag vigorously. Stuff back into microwave and cook another 1 minute. Pour onto ungreased cookie sheet and use spoon to spread out to cool. Break apart while still warm.

Notes: This will thoroughly cover all the popcorn with caramel. If you want a lighter coating with some popcorn not totally covered with caramel, use the full bag of popcorn. I buy two bags of popcorn to make 3 batches. It won’t last long and makes a great special treat.
